Vegan Raw Pizzas 

“Bold statement, but this might be the best vegan dinner you’ve ever made”

 

That was my boyfriend’s review to this delicious dish.

As always, the only problem I have when cooking raw and vegan is the time it takes to soak most of the ingredients for long times. For example, and please take note if you decide to cook this dish, one day before make sure to soak 2 cups of cashews and 1 cup of sun-dried tomatoes. Also, make sure to marinate your toppings with at least 3 hours in advanced.

 

Other than that, this is an easy and very healthy dinner idea. Hope you and your loved ones enjoy!

 

Ingredients:

 

Toppings:

-1 cup of mushrooms slice thinly

Marinate the toppings with time. This will make the flavour penetrate even more and enhance the flavour.

-1/2 cup of cilantro chopped

-1/3 cup fresh basil

-1 tomato cubed

-1/2 red bell pepper

-1 stick celery sliced thinly and chopped


Marinade:

-1/2 tablespoon lime (juice)

-1 tablespoon olive oil

-1 teaspoon of ground black pepper

-1 tablespoon water

-1 teaspoon salt

-1 tablespoon honey


Crust:

-1 cup of cashews (soaked for at least 3 hours)

-1 teaspoon of salt

-1/2 cup of fresh basil


Tomato Sauce:

-1 cup of sundried tomatoes soaked for at least 1 hour.

-1 tablespoon honey

-2 tablespoons of water


Cheese:

-1 cup of cashews previously soaked for at least 3 hours

-1/2 lime (juice)

-1 teaspoon salt

-1/2 cup fresh basil

-1 clove of garlic, core removed

-2 tablespoons of water

-1/2 tablespoon nutritional yeast


One day before, soak the cashews and the sundried tomatoes.

At least 3 hours before starting dinner place your topping ingredients with the marinade on a large bowl and let rest. 


Crust:

-Place the crust ingredients on the food processor until it gets a dough-like consistency. Finish incorporating the ingredients with your hands and expand on pizza crust shape of your preference. I decided to make 4 mini pizzas but you can do whatever shape you like.


Tomato Sauce:

-Place the sundried tomatoes with the honey and water on the food processor until you get a semi-liquid sauce. Place the sauce on the pizza crust.


Cheese:

Place all the ingredients on the food processor until you get a creamy consistency. Mine wasn’t liquid so what I did was grab mini balls with my hands and made a little circle and then place them on top of the sauce. You can add more water if you prefer a more liquid cheese.


Once you have your crust with the tomato sauce and the cheese, add your toppings and serve. I seriously recommend this dish to everyone, not just vegans or vegetarians. Hope you enjoy this dish and please let me know your opinion!
