Vegan Patties 

That you would actually want to eat... 

First, I liked this recipe originally because it looked like an actual patty and not those horrible "veggie" patties that nobody really likes but we all snapchat! Give 'em a try and you'll see. These are not to substitute your burger fix (if not vegetarian) but rather to eat healthy if that's what you're looking for.

 

Ingredients:

1 can of beans - I used rancheros

3/4 cups of cooked quinoa

2 cloves of garlic - minced

Juice of 1 big lime

1/2 red onion - minced

1/3 cup of olive oil  

A bunch of parsley chopped 

Salt and pepper to taste

Sesame seeds

Nutritional yeast - optional

 

Place the beans, garlic, oil, salt, and lime juice on the food processor and pulse until creamy.

Now add the quinoa, parsley, onion, nutritional yeast, and pepper to the mix and pulse around 4-6 times until combined but not fully processed. (You want some thickness formed by the quinoa and onion)

Place your mix on a clean bowl and add the sesame seeds and nutritional yeast. Mix well until everything is combined.

Here's the trick; I made my patties with the mixture freshly made and it was hard to shape and cook, but then I made them the next day and they were perfect and easier to cook! So let the mix rest at least for 4 hours before cooking. 

With a little oil on a pan, place your patties. (The smaller the better for easier flipping) Cook approximately for 3 minutes on each side. Transfer to your favorite type of bread with some lettuce and tomato! (and some jalapeños OBVS)
