Vegan Mango Ceviche 

Serve over tostadas with some sriracha, you won't regret it!

Delicious, healthy, fresh, light. Those 4 words best describe this amazing dish. I took one class with Mrs Yovanna also known as Rawvana on Instagram. This is what she taught us:

Ingredients:

-1 mango cut in pieces

-1 cucumber cut in pieces

-1 avocado cut in pieces

-1/4 onion chopped

-Juice of 2 limes

-1/2 serrano pepper chopped

-1 teaspoon fresh ginger chopped

-Salt, pepper, garlic powder. 

*You can add tomato, parsley, jicama. Anything you want really. 


Mix everything but the avocado. Make sure the juice coats everything perfectly. Now add the avocado and gently mix. Serve over a tostada or cut a jicama and make a jicama tostada. I also made a guacamole to accompany this delicious vegan meal!
