The Absolute Best Vegan Mac And "Cheese"

I must confess I was blinded to see beyond my options. Three weeks ago I was the biggest fan of that little blue Kraft box with cheese powder and macaroni. Until this happened. I have not been able to drink cow milk for over 2 years because of intolerance symptoms. Cheese I haven’t been able to fully leave because I love it. Even though I feel like a balloon full of hot air after eating cheese, I would still decide to eat a pizza or three-cheeses-pasta. No more. I discovered the alternative, and not just any, the best alternative!

 

On the tab of Lifestyle Index you will find all you need to know about Nutritional Yeast, which is our main ingredient for making the cheese-like sauce. Before you say anything, I dare you to try it.

 

Ingredients:

-Rice Pasta (I used macaroni for the sake of the dish, but you can use any pasta you like)

 

Sauce:

-1 cup almond milk

-1 medium cauliflower

-1/2 cup of nutritional yeast

-1/2 cup raw cashews previously soaked for at least 3 hours

-1 tablespoon of lemon juice

-2 roasted garlics

-1/2 tablespoon onion powder

-3/4 tablespoon kosher salt

-1/4 tablespoon paprika

-Salt and pepper

 

Garnish:

-Mushrooms (this depends on your taste, I used 1 cup just to garnish on top but you can add more and mix them in the pasta)

-1 tablespoon of Tamari Soy Sauce

-1 cup of parsley coarsely chopped

-1/2 cup of scallions (green onion) coarsely chopped

-1 tablespoon of chopped onion (use one from your scallions)

 

First start by boiling water for your pasta. It is not until boiling point when you add your pasta. My pasta said 9 to 12 minutes, but because I like it al dente, I never cook it for more than 9 minutes. You may add salt to the water.

 

While your pasta is cooking, start with the sauce. Place all the sauce ingredients on your food processor. It should have a yellowish color and creamy consistency.

 

Drain your pasta and place on the pot with as much as you want. I recommend starting with little sauce and taste. You can also put save some on the side for your guests who would like more sauce.

 

While mixing your pasta with your sauce, add your scallions, parsley, and mushrooms. Serve while hot and garnish with more parsley and scallions.

 

I kid you not when I say my Italian boyfriend loved it! Once again, this is the alternative if you have lactose intolerance, if you’re on a diet, or simply to try different things.
