Vegan Alfredo Sauce 

Just try it and judge for yourself! (Boyfriend approved)

I made this for my boyfriend on a whole wheat pasta but then I made it for myself on some zucchini noodles and it was just amazing!

I used more milk because I like my mix runny. But it ends up really creamy!

-1 small cauliflower

-Almond milk (you will add at least 1 cup and then according to your preference) 

-1 cup cashews soaked for 30 mins at least

-1/2 cup macadamias soaked for 30 mins (you can substitute with 1/2 cup more of cashews) 

-1 cup and 2 tbsps nutritional yeast

-juice of 1 lemon

-salt and pepper to taste

-1/4 onion chopped 

-1-2 garlics 

-olive oil for cooking 

First the cauliflower. Microwave for 7-9 minutes until tender. While this is going on, sautee your onion and garlic on little olive oil. Once the cauliflower is done, place it on your food processor with 1 cup almond milk. Let it go until you have a runny mixture. Now add the onion and garlic. Next add the nutritional yeast and lemon. Add salt and pepper to taste. I ended up adding like 2 1/2 more cups of almond milk. I then heat it up and added the pasta (or zoodles). Voila!
