Salmorejo

A Spanish dish similar to gazpacho filled with flavour!

This is a delicious way of ending your day and specially if it has been a loong day and you just want to eat something fast, healthy, hearty and of course, delicious! This is an easy dish and it is most definitely kids friendly! 

First, the ingredients:

These depend on what you like. For example, I used:

-1 kg of tomatoes 

- olive oil

-1 garlic with the center removed 

-1/2 baguette and some more for garnish 

-Salt and pepper

-2 boiled eggs 

-1/4 red bell pepper

Nevertheless, my friend's mom, Lorena, says many people in Spain also add cucumber, jamón ibérico, and any thing you may want to have in a cold soup! 

First, cut the tomatoes into halves and place them in the blender until it's liquid. You can strain if you like it more liquid, I strained half. Now place your 1/2 baguette in the liquid. Let sit for 10-15 minutes and then blend together. Add the garlic (or more if you like), the pepper, 1/2 cup of olive oil, salt and blend until smooth, aprox 5 minutes on a food processor. Place on a bowl and cover with plastic paper to cool for at least 2 hours on a fridge. For presentation cut the boiled eggs and garnish with some bread. Enjoy!
