Homemade Brittle Bars

Perfect office snack



-1/2 cup honey

-2 tablespoons water

-Pinch of salt 

-1 cup almonds

-1 cup cashews

-1 tablespoon hemp seeds 

-1/4 coconut (i use unsweetened) 

-1 cup rolled oats

*You will need kitchen thermometer 


Place the honey, water, and salt on a pot and cook on medium-low until 270F is reached. Meanwhile roast your almonds, cashews, coconut, and rolled oats until golden brown. Add the nut mix into the pot and coat evenly. Transfer the mix onto a baking sheet with parchment paper and place evenly. With a cup or your hands tap until the nuts are packed. Let cool for 40 minutes (before they completely cool) and cut with a sharp knife into the square bars. Let cool completely and then store them with parchment paper in between the bars. Enjoy at work... or wherever really!
