No Bake Peanut Butter Pie 

No time? No problem. 

An absolute success on my mom's dairy, gluten, calories-free home. 

ingredients: 

Crust:

-2 tbsp cocoa powder 

-1/2 cup raw cashews soaked for 1 hour 

-1/2 cup of unsweetened shredded coconut 

-1/8 salt

-8 pitted dates

Place all ingredients on the food processor until well blended. With your fingers and some parchment paper, push the crust on your pie pan. 

Filling:

-280 g (1 cup plus 2 tbsp)  Peanut Butter (I used homemade organic peanut butter, no sugar, no salt)

-3 medium frozen bananas

-2 tbsp of pure vanilla extract

-1/2 tsp salt

-3-4 tbsp coconut sugar

-1/4 cup coconut oil 

Blend everything except the coconut oil on the blender. Once you have a creamy texture, blend with the coconut oil and expect a creamy but runny mixture. Place on your pie pan and freeze for 2-4 hours before serving. Freeze for storage.
