Avocado Chicken Burgers
Just when you thought you couldn't make lunch or dinner easier, here comes these amazing avocado chicken burgers. Honestly, children approved!
So basically you can alter the ingredients and make them turkey or ground beef burgers. I can only imagine they must also taste great!
Yield 4 patties
- 1 lb of chicken breasts
- 1 medium ripe avocado in chunks
- 1 teaspoon garlic minced
- 1 egg
- Salt Pepper
- Panko or bread crumbs if its too moist
First, your chicken. Make sure you pat dry it with a towel before grounding. I am not a huge fan of buying ground meat on the supermarket because i do not wish to know what they are grounding. I haven't bought ground meat at the supermarket since I discovered I can do it with my food processor. So I recommend you to do it like that aswell.
So, cut your chicken breasts into squares and pulse in your food processor a couple of times or until the chicken looks like ground meat. Now place the chicken on a bowl and season with salt, pepper and garlic. Mix well. Now add the slightly beaten egg and mix. Carefully add the chunks of avocado and gently mix.
Turn on the grill.
Form patties with your ground chicken mix and place over the grill. Make sure they are well done. Aprox 5-6 minutes.
Instead of bread, I wrapped them in lettuce and ended up having a delicious and healthy meal.
